what kind of paint would be used to paint a boat canopy?
You just never ... ever ... use a paint on a boat canopy, chery!
Well, not really you don't.
You use a sealing product such as Fabsil™.
You buy it in spray can or still can. It is much better in the still can. Decant it into a regular 'hand-pump' bottle (like you get with window-cleaner in) and use to spray your canopy.
It is always best to completely remove the canopy from the vessel. Hang it over lines made-ready for the job.
Choose a nice, still day.
First, whatever the canopy-type, spray or brush the sealant onto all of the most important parts - all the places where there are seams. Stitches. Joins. Vents. Window-seams., etc.
Then, if the canopy is a fabric, the rest! Inside and out.
If it is a vinyl-covered fabric, well ... I'm going to have to leave it to you to experiment yourself with rubber-based paints. My own feeling is that the canopy is such a crucial weather-defence that I personally would be ordering a new canopy at that stage.
